Thai Spicy Minced Chicken with Basil

My recipe for spicy minced chicken with Thai basil is quick and easy to make with just a handful of ingredients. Like any Thai recipe, there is no perfect version of this dish; you have to constantly taste, improvise and create your own perfect version of the recipe. Serve this delicious spicy mince with steamed Jasmine rice and your choice of greens for a complete meal. Enjoy the recipe!
Ingredients for Thai Spicy Minced Chicken with Basil1 heaping tablespoon shaved palm sugar
1 teaspoon dark soy sauce 2 tablespoons fish sauce Juice of 1 lime or lemon 3 tablespoons coconut oil 1 lemongrass stalk - bashed with a pestle 1-inch piece ginger, peeled and finely chopped 4 garlic cloves, finely chopped 2 fresh red or green bird's eye chilies, finely sliced 500g minced chicken or pork or beef or lamb 2 lime leaves, finely chopped (get rid of the midrib, roll the leafy part and slice thinly) 1 cup shallots, sliced 15-20 green beans, chopped into 1-inch pieces large handful Thai sweet basil |

1. In a bowl, stir together palm sugar, dark soy sauce, fish sauce, and lime juice to make sauce - set aside.
2. Heat oil in a large frying pan or wok. Add lemon grass stalk, ginger, garlic and chilies - stir-fry for about a minute until fragrant. 3. Add mince, then stir-fry on medium-high heat until cooked, breaking it up with a wooden spoon as you go. 4. Add sauce and shredded lime leaves, then cook everything down until sticky. Add shallots, chopped green beans and stir well for another 1-2 minutes. 5. Finally, take it off the heat and add Thai sweet basil. Stir well, and discard lemon grass. Serve spicy minced chicken with Jasmine rice and a side of steamed greens. |
