Ingredients for Sourdough FocacciaInitial Prep:
100g Active Sourdough Starter 320g Water 400g Bread Flour 15g Olive Oil 8g Salt Extra Olive Oil (for the baking pan) 8x8” non-stick baking pan (or a bit larger for flatter focaccia) Final Bake:
15g olive oil mixed with 15g water 10 tomatoes on the vine, halved Fresh rosemary, chopped Maldon salt flakes and pepper A drizzle of Olive Oil Optional: Garlic, sliced onions, olives for extra pizzazz! |

Let’s Prep:
1. Mix starter with water. Add olive oil, flour, then mix well with a spatula. 2. Sprinkle in the salt, knead until well combined. Rest for 30 mins. 3. Perform 3 stretch and folds, 30 mins apart. Watch it become smooth and shiny! 4. Oil your pan, shape the dough (simple coil folds also work), and let it rise for 3-4 hours in the pan. If you’re cold retarding: cover & refrigerate for 14-16 hours, bring to room temperature until slightly bubbly, then continue with step 5. Final Bake: 5. Preheat oven to 220C. 6. Drizzle olive oil-water mix over the dough. Poke holes all over. 7. Top with tomatoes, rosemary, salt, pepper, and more olive oil. 8. Bake for 30 mins till golden. Cool, slice, and enjoy! |
