Prawns in garlic-white wine

- Serves 3-4
A super easy weeknight dinner, especially on when you have a good sourdough loaf to lap up all the delicious juices in this recipe.

Ingredients for Prawns in Garlic-White Wine

​1.5 tablespoons olive oil
1-2 tablespoons butter
12-15 medium-large tiger prawns, peeled
3 cloves garlic, chopped
1 large pinch chili flakes
10 vine-ripened tomatoes, halved
1/2 tablespoon lemon rind
3/4 cup dry white wine (Sauvignon Blanc) or vodka
1/2 chicken stock cube
salt and pepper, to taste
Freshly chopped parsley, for garnish
Toasted Sourdough loaf, to serve

Recipe

  1. Heat 1 tbsp olive oil and 1-2 tbsps butter over medium-high heat in a large wok or pan. Add prawns and pan fry on both sides until golden. Set aside.
  2. Add another 1/2 tbsp oil in the same pan. Sauté garlic for 30 seconds or until fragrant. Add chili flakes and cook until garlic softens. Add tomatoes - let them char slightly. Pop cooked prawns and any juices back into the pan.
  3. Pour white wine to deglaze; add chicken stock cube, salt and pepper to season - bring to the boil.
  4. Add chopped parsley - stir.
  5. Serve with toasted sourdough loaf of your choice or toss with cooked linguine or spaghetti.
