Caramelized Onion Jam |

Our sweet, and savory caramelized onion jam is delicious on salty cheese, on toast or pizza, in burgers or simply eaten on its own. We love serving it in lamb burgers with some fresh goat cheese and arugula. Best part: once done you can refrigerate this sticky blob of deliciousness in a sterilized jar for up to 3 months and serve it warm or chilled! Enjoy the recipe!
Ingredients for Caramelized Onion Jam1/4 cup Papa's Grove extra-virgin olive oil
900g large red onions, sliced 2 bay leaves 2 sprigs parsley 2 sprigs rosemary 1 cup sugar 3/4 cup quality balsamic vinegar 1 teaspoon sea-salt |
Recipe |
1. Heat oil in a large heavy based saucepan. Add onions and cook stirring occasionally on medium flame for about 15 minutes until golden-brown. Add bay leaves, parsley, and rosemary, and cook for a few minutes until fragrant.
2. Reduce heat to low flame. Sprinkle sugar all over onion and let it cook for about 5 minutes, without stirring, until sugar melts. 3. Increase heat to high and cook without stirring for another 5 minutes until sugar caramelizes. 4. Pour in balsamic vinegar, stir well, and simmer on low heat for a few minutes until jam thickens. Add salt - stir well. Discard herbs. Cool jam and refrigerate in a sterilized jar. 5. Serve it on salty cheese, on toast or pizza, in burgers or with grilled meat of your choice. We love it in lamb burgers with some fresh goat cheese and arugula. |
