Marinated Olives

- Serves 10

​For those who love olives, here is my easy-peasy recipe for marinated olives - this is like a welcome bowl for all our guests and I almost always have these sitting in our fridge too 😊. These are beautiful by themselves and even better served alongside some good bread (I emphasize, GOOD bread) to dunk into all that flavor-rich oil.

Ingredients for Marinated Olives

​a few sprigs of rosemary or thyme
2-3 dried red chilies, halved
peel of 1 lemon
2-3 bay leaves
15 garlic cloves
10-12 shallots
1.5 cups olive oil
A good pinch of salt
2 tablespoons good balsamic vinegar
400g bottle Spanish green olives, drained and rinsed

Recipe

  1. ​Place all ingredients (except olives) in a saucepan and heat on low-medium flame for 7-8 minutes.
  2. Add balsamic vinegar.
  3. Then pour over rinsed olives. Chill it all before serving by itself or with bread of your choice.
