Imam Bayildi is one more reason to love eggplant. This iconic Turkish dish consists of whole eggplants stuffed with onions, peppers, tomatoes, garlic and spices, which are then slowly simmered away in quality olive oil. By the end, the eggplants are almost flat and the liquid in the pan slightly caramelized, resulting in this deeply flavorful comfort dish. Ingredients for Imam Bayildi700g Pearl eggplant (Japanese pearl eggplants work well)
120ml light olive oil, to shallow fry eggplant 3 tablespoons Papa’s Grove extra-virgin olive oil 300g onion, halved and finely sliced 2-3 large green or red chili peppers, deseed for milder flavor and chop into 1 cm pieces 400g quality plum tomatoes, chopped or 400g chopped Italian tomatoes 3-4 garlic cloves, finely chopped 1.5 teaspoons cumin powder 1 teaspoon paprika 1 teaspoon dried mint 1 bunch flat leaf parsley, finely chopped Juice of ½ lemon 2 teaspoons sugar Sea-salt and black ground pepper, to taste Extra wedges of lemon, to serve |
