Homemade Buttermilk Pancakes |

This is another one of my most cherished breakfast recipes, and one that I have been making for my children forever. Super-easy to make and ready in no time, I've made this recipe numerous times even using buttermilk substitute. The result is always light, fluffy, and so good, one can eat them by the dozen.
Ingredients for Homemade Buttermilk Pancakes1 cup buttermilk (or buttermilk substitute - mix 1 cup milk with 1 teaspoon lemon juice or vinegar; let stand for a few minutes before using)
1/4 cup coconut oil 1 egg 1 cup all-purpose flour 1/4 teaspoon salt 2 tablespoon sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon vanilla extract |

1. In a large bowl combine your dry ingredients.
2. Add your flour, salt, sugar, baking powder, and baking soda. 3. Whisk them together then add your egg, oil, vanilla and buttermilk. Mix well until incorporated. 4. Heat a non-stick crepe pan on a medium flame for about 5 minutes. 5. Once the pan is hot, pour the pancake batter on and wait until lots of little bubbles form on the top before flipping over. Serve hot with maple syrup, whipped cream and scrambled eggs. Enjoy! |
