Handmade Chinese Noodles

​Handmade Chinese Noodles

Serves 3
Ever tried making fresh noodles at home? Fresh handmade noodles are the epitome of comfort food in my opinion; silky and chewy at the same time, there is nothing quite like them🤤. I often make them with leftover dumpling dough; you should definitely try them at home if you have done our dumplings or Xiao Long Bao class already. If you have not, here is a quick and easy recipe for fresh egg noodles with spicy soy and vinegar dressing.

Ingredients
​

​310g strong bread flour or all purpose flour, plus more for dusting 

2 eggs + water = 156g

1/2 teaspoon salt
​Sauce:
1/3 cup light soy sauce

2.5 tablespoons rice vinegar

2 teaspoons minced ginger

2 teaspoons minced garlic

1-2 teaspoons chili in oil

1 tablespoon sesame oil
​Garnish:
1 spring onion, finely chopped

1-2 teaspoons toasted black and white sesame

Recipe
​

1Mix together flour and salt in a large bowl.


2Add the egg water mixture (2 eggs + water = 156g) into the flour. For vegan option, you can skip the egg and add about 128g water altogether.


3Stir well with chopsticks then knead with your hands for 8-10 minutes until smooth. Cover with a damp towel and let it rest for 30 minutes.


430 minutes later, knead it again for 5-8 minutes until you have a smooth dough, to get any air bubbles out. Split into 3 equal balls.


5Dust each ball with flour and roll out into 1 mm thick sheets. Make sure the sheets are even in thickness or they won't cook properly.


6Keep dusting with flour on both sides of the sheet. This prevents the noodles from sticking together.


7Fold the sheet and cut noodles into desired thickness. Stretch them out slightly, toss with more flour so they don’t stick.


8Mix all sauce ingredients- set aside.


9Put the noodles in boiling hot water for 2-3 minutes. Test after 2 minutes to check if you’d like them softer. Drain through a sieve and place noodles in 3 serving plates. Immediately drizzle sauce all over and serve hot garnished with spring onions and toasted sesame.
