Gluten-free Rice Flour Wraps

- Makes 6 wraps

Flatbreads for breakfast, lunch and dinner - and each and every one of them made using a different grain, and served steaming hot & fresh off the pan every single time!! I am in my mum’s kitchen in India 🇮🇳 and you are looking at her Rice Bhakri (rice flour wraps). Traditionally eaten with curry, this fluffy flatbread is just as good served as a gluten-free wrap or by itself with some salted butter😋😋 - recipe below! Ingredients ​for Gluten-free Rice Flour Wraps
​(Rice Bhakri)

1 cup water
1 cup finest rice flour (NOT glutinous)
¼ teaspoon salt
1/2 tablespoon ghee or coconut oil, to grease hand

​​​​​Recipe 

  1. Pour water in a medium saucepan and bring to a hard boil. Add salt and rice flour, stir well using chopsticks for about 2 minutes until crumbly.
  2. Turn off the heat, cover the saucepan and let the mixture steam for about 10 minutes.
  3. Add oil or ghee, then bring the dough together, and knead for a few minutes until smooth. Next, split the dough it into 6 equal portions.
  4. Roll each portion of dough between your palms into a smooth ball, flatten it slightly and dust all over with rice flour. Using a rolling pin, roll it out into a thin uniform circle. Check out our short video on how to roll rice flour wraps on Instagram.
  5. Heat a non-stick skillet on medium flame for 5 minutes. Gently place the flatbread on the skillet.
  6. Cook for 3-4 minutes until cooked through, flipping every 30-40 seconds or so, until lightly golden on both sides. Repeat with remaining dough. Serve hot with curry or as a wrap with your favorite filling.
