Insalata Caprese (Italian Caprese Salad)

There is nothing better or simpler than a summer salad made with sweet, juicy cherry tomatoes, nutty pesto, and creamy burrata. Good ingredients are key here - sea-salt, freshly ground pepper, fresh basil and a drizzle of quality balsamic and extra-virgin olive oil are all you need to put together this ever-popular Italian salad. Don't forget to throw in some toasted sour-dough to lap up this delicious mix of freshly made pesto and balsamic. Enjoy the recipe!
Ingredients for Insalata Caprese1 pack (15-20) sweet cherry tomatoes or 12-15 tomatoes on the vine, halved
1 ball good-quality burrata cheese 6-8 leaves Italian basil, chopped 1.5 tablespoons quality aged balsamic vinegar or balsamic glaze 1.5 tablespoons EV olive oil 1.5 tablespoons pesto (recipe here) sea salt and freshly ground pepper, to taste toasted sourdough, to serve |

1. Using the back of a spoon spread pesto a cheese board, Place tomatoes on the board. Sprinkle tomatoes generously with salt and pepper.
2. Next, drizzle olive oil and balsamic all over and place burrata on top. Garnish with basil leaves. 3. Serve immediately with some toasted sour dough bread for a complete meal. |
