Bok Choy with Fried Garlic

Pak Choi or Bok Choy is a kind of Chinese cabbage available in Southern China and parts of Southeast Asia. It has wide green leaf blades with much lighter bulbous bottoms. This nutrient-dense vegetable is cheap, easily available and really simple to cook - blanch, boil, or sauté, for a delicious side or simply add it to soups and noodles for a tasty and nutritious meal. One of my most favorite ways to enjoy Bok Choy is by simply quartering, rinsing, boiling and adding the cooked leaves to Tom Yum Gung with a hard-boiled egg - YUM! But for now, let’s make one of the simplest, tastiest sides you can imagine - Bok Choy with Fried Garlic.
