Thai Minced Chicken with Sweet Basil
3 tbsp coconut oil
1 inch piece ginger, peeled and finely chopped
4 garlic cloves, finely chopped
1 cup shallots, sliced
2 red or green chillies, finely sliced
500g minced chicken or pork or beef
1-2 tbsp organic honey
2 tbsp fish sauce
1 tsp dark soy sauce
Juice of 1 lime or lemon
1 cup thai sweet basil leaves
1. Heat oil in a wok. Add ginger, garlic, and chili. Stir-fry until fragrant.
2. Add mince, stir-fry on medium-high heat until cooked, breaking it up with a wooden spoon as you go.
3. Add fish sauce, honey, dark soy sauce, and lime juice then cook everything down until sticky. 4. Add shallots and stir well for another minute. Finally add Thai sweet basil.
5. Serve with a bowl of steamed jasmine rice, and a lime wedge.
