Savory Parmesan French Toast
1 heaped tablespoon Dijon mustard
1/4 cup finely grated Parmesan cheese
1/4 teaspoon freshly ground black pepper
3 tablespoons milk
1-2 tablespoons butter
4 thick slices Sour dough bread
Maple syrup, to serve - optional
1. Place cracked eggs, Dijon mustard, Parmesan cheese, black pepper and milk in a flat dish, whisk until well incorporated.
2. Place sliced bread in the egg mixture. Let it sit in the egg mixture flipping occasionally until all the liquid is absorbed by the bread.
3. Heat a large frying pan on low-medium heat. Drop in butter and let it melt. Place bread slices in melted butter and cook for 3-4 minutes flipping occasionally until crispy golden brown on both sides. Serve hot drizzled lightly with maple syrup.
