Mango Sago Pomelo

- Serves 6
If you’re looking for a light, refreshing dessert that’s packed with tropical flavors, Mango Sago Pomelo is the perfect choice! This creamy, chilled treat is made with sweet mango purée, chewy sago pearls, juicy pomelo, and coconut milk, creating the ultimate balance of flavors and textures.

​It’s naturally gluten-free and dairy-free, making it a great option for everyone to enjoy. Whether you need a 
cooling dessert on a hot day or just want something light and fruity after a meal, this easy-to-make classic will hit the spot.

Ingredients 
  • 80g sago
  • 1.6L water 
  • 2 large ripe mangoes
  • 60g sugar, or to taste 
  • 160ml coconut milk
  • 160ml evaporated milk
  • 1 handful ice cubes
  • 4 wedges pomelo

Recipe

  • Cook sago in 1.6L boiling water for 5 minutes. Then cover, turn off the heat and let it rest for 10 minutes, until swollen and translucent. Drain, rinse under running water for a few minutes. Place sago pearls in a bowl of iced water. Drain before using.
  • Peel Mangoes and cut into cubes, reserving about half of it in the refrigerator.
  • Puree the other half of the mango with coconut milk, evaporated milk and ice cubes. Taste and add sugar to adjust sweetness. Refrigerate.
  • Peel pomelo and separate the pomelo wedges. Peel about 4 wedges further into smaller sacs. Save some for garnish in the refrigerator.
  • Mix chilled sago and pomelo with mango smoothie. Chill for 1-2 hours.
  • Pour into 6 bowls - garnish with more mango and pomelo sacs.
