Homemade Granola

-Serves 8-10
​Tired of buying packaged granola that’s full of fillers, sugar, unhealthy oil, and barely any nuts? Try my easy-peasy homemade Coconut Granola recipe - packed with crunchy oats, almonds, cashews and coconut flakes, it’s an absolute treat served with yogurt, or almond milk. So GOOD, you might be even start snacking on it by the handful! Full recipe video here!

Ingredients for Homemade Granola

2 cups old-fashioned rolled oats 
3/4 cup shredded unsweetened coconut
1/2 cup chopped almonds
1/2 cup halved cashews
1/4 cup pumpkin seeds
2 tablespoons brown sugar
1 teaspoon cinnamon
1/4 teaspoon sea-salt
4 tablespoons coconut oil, melted
1/2 cup pure maple syrup or honey
1 teaspoon vanilla extract

Recipe

  1. Pre-heat your oven to 300ºF or 150ºC. Line a large baking sheet with parchment paper. Set aside. 
  2. In a large bowl, combine oats, coconut, almonds, cashews, pumpkin seeds, brown sugar, cinnamon, and salt. 
  3. In a small bowl, whisk together coconut oil, maple syrup, and vanilla extract. Pour liquid mixture over dry ingredients. Mix well using your hands until dry ingredients are well-coated. 
  4. Pour the granola mixture onto the prepared baking sheet. Spread granola into an even layer. Bake for 30 minutes or until granola is golden brown, stirring every 10 minutes to achieve even brownness all over. 
  5. Let granola cool completely. Store in an air-tight container for up to a month. Serve with yogurt and berries or simply mixed with homemade almond milk
