Air-Fryer Miso Cod with Noodles & Salad

- Serves 4
Get ready for a flavor explosion with our Air Fryer Miso Cod with Noodles & Salad! This quick and easy recipe is perfect for a speedy weeknight dinner or a special weekend treat. Juicy black cod steaks marinated in a savory-sweet miso sauce, air-fried to perfection, and served with tasty noodles and a fresh, vibrant salad. Follow our simple steps to whip up this delicious dish that’ll impress your friends and family.

Ingredients:

For the Cod:

750g black cod steaks
2 tablespoons white miso
4 tablespoons mirin
1 tablespoon sake or Chinese wine
2 tablespoons coconut sugar or light brown sugar
1/2 teaspoon salt

For the Noodles:

75g fresh noodles per person 
Toasted sesame oil, for drizzling
Toasted black and white sesame seeds, for garnish

For the Salad:

Greens of your choice (I used Mizuna, tomatoes on the vine, roasted beet, and pomegranate arils)

For the Dressing:

1 heaping tablespoon tahini paste
1 teaspoon white miso
2 tablespoons sesame oil
1 tablespoon light soy sauce
1 tablespoon rice vinegar, or more to taste
1 teaspoon honey
Salt and pepper, to season

Recipe

1. Prep the Cod:
  • Mix together the white miso, mirin, sake (or Chinese wine), coconut sugar (or light brown sugar), and salt to make the marinade.
  • Dip the cod fillets in the marinade and let them soak for a few hours, or cook right away if you’re in a rush.
  • Preheat your air fryer to 200°C (390°F).
  • Pop the marinated cod fillets in the air fryer and cook for 14 minutes or until they’re perfectly cooked.

2. Cook the Noodles:
  • Cook the fresh noodles in boiling water until al dente.
  • Toss the noodles in the remaining marinade sauce in the air fryer to heat them up.
  • Drizzle with toasted sesame oil and sprinkle with black and white sesame seeds.

3. Make the Salad:
  • Grab your favorite greens and veggies. I used Mizuna, tomatoes on the vine, roasted beet, and pomegranate arils.
  • Mix tahini paste, white miso, sesame oil, light soy sauce, rice vinegar, honey, salt, and pepper to make the dressing.
  • Drizzle the dressing over the salad right before serving.

4. Serve:
  • Plate the cooked cod with the noodles and salad on the side. Enjoy your delicious and healthy meal!
